Kale, Pasta and Sausage Alfredo is a lovely combination of ingredients that will leave you full after one bowl. The kale adds a texture that you just can’t get with spinach. The Alfredo sauce adds in a sweetness that regular tomato sauces just don’t add. And the pasta is really up to you. This recipe has been created with three different types of pasta in order to add to you satisfaction level.
Wheat Pasta
The first recipe uses regular penne pasta. Now, there is nothing wrong with eating pasta, but, if you are trying to stay strict to a low carb diet, pasta is the first thing to go. Breads are probably second. So this option is probably not for you. I like to use penne because the sauce rolls inside the noodles and you get more Alfredo in every bite.
Vegetable Pasta
The second recipe uses chickpea pasta. This is the pasta you see pictured here. There are about 30-35 grams of carbs per serving. So, if you’re trying to stay in that low carb option, then it is probably best to halve the amount of pasta going into this recipe. Again, probably not the best in choice of high carbs, but these noodles are very filling.
<1g Carb Pasta
The third recipe uses miracle noodles. If you haven’t heard of miracle noodles, then you just found yourself the best low carb noodle that has ever been created. These noodles offer less than 1 gram of carbs. Bleeping wonderful! Eat all the pasta you want! Here is one of the brands of Miracle Noodles that I purchased on Amazon. You should definitely keep these as a staple in your cupboard!

Kale, Pasta and Sausage Alfredo
Ingredients
- 1 package Jalapeno Cheddar Sausage Links
- Bertolli Alfredo Sauce
- Lentil Pasta
- kale
Instructions
- Slice and saute the sausage links in a fry pan.
- Add kale into the sausage pan and let wilt.
- Prepare pasta according to instructions, then add to pan of sausage and kale.
- Add the Alfredo sauce to mixture, then stir until warm. Serve immediately.
